Ingredients
4 medium turnips (approx. 2 lbs)
1/2 stick butter, cut into pieces (plus extra for greasing dish)
2 cups heavy cream
2 cups sharp cheddar, grated
salt and pepper, to taste
Directions
  1. Preheat oven to 350° F. Peel the turnips. Cut off the tops and bottoms. Using a mandoline or the slicing attachment on a food processor, slice the turnips very thin. 
  2. Butter an 8 x 8 baking dish. Layer 1/3 of the turnips in the bottom. Top with 1/3 of the cream, a few pieces of butter and 1/3 of the cheese. 
  3. Repeat layers with remaining ingredients. Sprinkle the top with salt and pepper. 
  4. Cover with foil, and bake for 45 minutes. Remove foil, and bake for 15 more minutes. 
  5. Let rest for 10 minutes before serving.
